Ahhhhhh! Chocolate chip cookies turned cake and a perfect single serve portion at that!
Ever had a sweets hankering and just needed one bite or two!? Well I’ve got you friend! I’m going to start with my favorite dessert… chocolate chip cookies! With a twist of course. My favorite cookie recipe turned single serve cake!
You don’t have to get out the baking pans, mixer or wait hours to taste. The kiddos can even help!
The best part, besides the taste, it only takes 1 minute in the microwave! Yes I said 1 minute for light, fluffy & decadent dessert. And its super versatile, you can “bake” it in a coffee mug, a small ramekin, or any small microwave safe bowl. Top it with chocolate sauce, chopped walnuts, scoop of ice cream or eat it as is! You can’t go wrong.
This chocolate chip cookie cake recipe is the best! It tastes exactly like my warm chocolate chip cookies fresh from the oven, but in the form of a cake.
2 tbsp all purpose flour
2 tbsp cake flour
2 tbsp brown sugar lightly packed
1 tbsp granulated sugar
1/4 tsp baking powder
3 tbsp whole milk
1/2 tbsp unsalted butter melted
Pinch of salt
2 tbsp semisweet chocolate chips
- Combine all ingredients except chocolate chips into a microwave safe ramekin or mug. This recipe creates a small cake, so you can use a 6-8 oz mug and it will reach the top when finished cooking. Mix with a small whisk until a smooth batter forms and no lumps remain.
- Sprinkle chocolate chips over surface. Cook in microwave for 1 minute.
- Let cool a couple minutes before eating.
* You can substitute cake flour for all purpose flour. Recipe can also be created gluten free by substituting flours with King Authors Flour – Measure for Measure Flour.
